Anyone else get a craving for a smoothie after a weekend of eating not so healthily? If you are like me, then this smoothie is what you need. It is tasty, healthy, and incredibly refreshing!
Did you all have a good Easter? We celebrated on Saturday as that is what worked best for my family this year. My mom made a turkey dinner, and true to form I loaded on the gravy. Her gravy has got to be the best I’ve ever had. It is just too good! Not to mention that I made my Mini Egg Skillet Cookie and have been eating many, many pieces of that. Maybe some chocolate bunny too. And ice cream.

Back to this smoothie – have you ever tried mint in a smoothie before? I know it might sound a bit strange to some, but trust me on this. This isn’t in-your-face minty where it tastes like toothpaste. Rather you can taste it ever so slightly behind the flavors of raspberry and pineapple, and it is truly what makes this smoothie stand out.
I highly recommend using frozen fruit for this smoothie because that is what helps make this THICK without watering down the taste with ice cubes. No ice cubes are necessary when you use frozen fruit! Frozen bananas especially make it nice and creamy.
This would make a perfect, quick weekday breakfast but is also great as a snack. It is such a treat, and almost feels like you’re eating soft serve ice cream except that its healthy, so maybe you could have it for dessert too. Personally, with this recipe I like to keep it simple but feel free to throw in extras like your favorite nut butter, chia seeds, hemp hearts, etc. just be aware it may slightly change the taste/texture.

Raspberry Pineapple Mint Smoothie
Ingredients
- 1 cup frozen raspberries
- 1 cup frozen pineapple chunks
- 1 banana frozen
- 8 large mint leaves
- 1 cup coconut water
- 1 1/4 cup coconut milk or other milk/milk alternative of your choice
Instructions
- Add all ingredients to a blender and blend on high until smooth. If it is still too thick, add a splash of more coconut water or milk until preferred consistency.
- Pour into two glasses for serving, garnish with more mint if desired, sip and enjoy!
