Hey all, and happy Monday! How are you starting off your week? I’m just living my best life and snacking on some of this pomegranate, walnut and whipped ricotta toast and feeling good!

Is the toast trend a thing still? Please tell me it is and I’m not hopelessly behind. But even if I behind on what food thing is cool and whats not, I don’t care because fancy toast will forever be an awesome snack.

I’ve always loved toast, and I truly do love that these fancy toasts are a thing now. One, because bread. Two, I love adding all of the toppings to things. Toppings are my life. And three, bread. Again. Seriously a carb-a-holic over here.

Before getting into the details I want to ask, how do you love your toast? Super crispy and toasted just before the burning point? Soft and barely toasted where its basically just a warm slice of bread? Or somewhere in the middle with a nice golden hue, crispy exterior and an internal softness? I’m somewhere around the middle, between medium, medium-rare if you will. Yes I am using steak cook preferences as a comparison for toast preferences. It works!!!

Lets discuss this toast in particular now.I decided to use a sunflower seed flax bread as I was craving something seedy at the time. I’d say you really can use any kind of bread that you prefer, as long as it will be sturdy enough for these toppings.

On to what I’ve topped this toast with – first you’ve got the whipped ricotta. This is just regular ricotta I’ve put into my small sized blender and let it run for a little bit until the ricotta became super smooth and creamy. It really transforms into something wonderful doing this.

Next up are the pomegranate arils -shiny red jewels! I remember being obsessed with pomegranates as a kid, when my aunt introduced me to them. I loved digging through the flesh to find the little delicious prizes. However I hadn’t bought one myself for a few years at least. When I went to get one from the store they were $3 each. EACH. Honestly, at that time I didn’t want to may that much for a single piece of fruit because I wasn’t sure if that was too much or not. Is this price normal? I really have no clue so someone please tell me!

In the end I purchased a bag of frozen pomegranate arils for about $3 and has at least a few fruits worth it seems. You can definitely do this too but be sure to let them defrost first. I feel like fresh would definitely be better though so use that if you can!

Chopped walnuts are the next thing on this toast to add some extra crunch and a bit of extra healthy fats and protein. I really liked the addition of these to this toast!

Finally we finish things off with a pinch of chili flakes to add some spice (totally optional) and a drizzle of honey for some sweetness. If you can handle a bit of spice please add both of these, I think they are totally what brings the flavours all together and takes this toast from good to OMG YUM.

Ingredients

  • 4 slices bread of choice
  • 1 cup ricotta
  • 1/2 cup pomegranate arils
  • 4 tbsp chopped walnuts
  • 1 tbsp honey
  • 1 pinch chili flakes (optional)

Instructions

  • In a small blender or food processor add ricotta and blend for about 30 seconds or until smooth and creamy.
  • Toast bread to liking, then spread a thick layer of ricotta and top with pomegranate arils and walnuts. Finish with a pinch of chili flakes and drizzle of honey. Enjoy immediately.

  1. I absolutely love whipped ricotta and pomegranate arils… use this combination all the time! Great idea to have it on toast for breakfast.

  2. This is the ultimate breakfast idea, Vanessa! I love such easy and healthy recipes which I can just prepare and have even on the go and when not having time for proper breakfast. Is it possible to use maple syrup instead of honey?
