Well, here we are at the start of another new week. Lucky for me it’ll be a short week as it was a holiday today in my province. It was a good long weekend full of both fun and relaxation. On Saturday we went to an Escape Room for a friends birthday and guys, I think I may be hooked now. It was so much fun! Maybe it helps that our group managed to escape the hardest room they had at the place we went, with just about 8 minutes to spare. It was really fun to work on all sorts of different puzzles and put our minds together to solve the clues and riddles. If you haven’t been to one yet I would highly recommend giving it a go!

Today I have just been cleaning up around the house, as well as watching some more TV. Joel and I started watching a show about the Unabomber and it is actually pretty fascinating! I had heard of the Unabomber previously but never knew much about the case itself so it is interesting to find out more. I think we may watch a few more episodes tonight while we eat dinner (chicken nachos are on the menu!). But before that I plan to prep myself some breakfast for this week and that’s where this recipe comes in!

I have really been trying to prep myself healthy breakfasts for during the week lately, which is basically the only meal prep I do. I pretty much need to as most days I don’t have much time in the mornings to make anything for myself besides a quick bowl of cereal, and I refuse to wake up any earlier. Not being a morning person makes having recipes like this baked oatmeal amazing to have on hand. All I have to do is scoop myself up a portion and I can either eat it quickly before leaving the house or take it to heat up and eat at work!

Whether you’re a busy mom or dad, someone who just likes to meal prep, or someone like me who just hates mornings this recipe is for you! It reheats well and is much better for you than that sugary bowl of cereal.

I love the fresh flavour the fruit gives to this baked oatmeal. The blueberries and peaches with the hint of coconut give this a real spring or summer feel too! The thing I love about this though is that even at this time of year when neither blueberries or peaches are in season, you can use frozen fruit for this recipe no problem. That is what I did and it turned out great!

This has the taste of a fruit cobbler or crisp. And you know what? It almost is like one. Just a bit more on the oatmeal side of things, and definitely healthier. So it is basically like having dessert for breakfast, but no guilt! I’m here for it.

This blueberry peach coconut baked oatmeal recipe is super easy. A combination of oats, brown sugar, coconut and spices is layered over a mixture of blueberries and peaches in a baking dish. Then a mixture of milk, egg, coconut oil, and vanilla and almond extracts is poured over it all before baking. The top layer of the oatmeal gets a nice crispness to it while the rest is creamy and fluffy. Enjoy it fresh and warm from the oven or refrigerate for later.

You can easily switch up the fruits you use in this too if you prefer other types of berries. I feel like some sort of mixed berry version would be amazing and so would an apple version. You could also thrown in chopped nuts as well if you would like a bit of crunch.

Blueberry Peach Coconut Baked Oatmeal

Ingredients

  • 1 cup blueberries (frozen is okay) , plus extra for topping
  • 1 cup peach slives (frozen is okay) , plus extra for topping
  • 2 cups quick oats
  • 1/2 cup shredded coconut
  • 1/4 cup brown sugar
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 2 cups coconut or almond milk
  • 3 tbsp coconut oil
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract

Instructions

  • Preheat oven to 350°F. Spray a 9 inch square baking dish with cooking spray. Put blueberries and peach slices in baking dish and toss to combine.
  • In a medium sized bowl stir together the oatmeal, shredded coconut, brown sugar, salt, cinnamon and baking powder. Layer over the blueberries and peaches, evenly covering the entire dish.
  • In medium sized mixing bowl whisk together the coconut/almond milk, coconut oil, egg, vanilla extract and almond extract. Pour evenly over oatmeal and fruit mixture. Gently shake the baking dish back and forth and side to side to allow the wet mixture to distribute. Top with additional blueberries and peaches if desired.
  • Bake for 45 minutes until mixture is set. Serve immediately or allow to cool and refrigerate to reheat later.

    Love make ahead breakfasts and this one looks so good Vanessa! The blueberry, peach, coconut combo sounds delicious and it definitely has a summer vibe.
