Apple Cheddar Bacon Breakfast Sandwich – sharp cheddar, crispy bacon and apple slices served on a croissant brushed with thyme infused butter. These sweet and savory flavours are a mouthwatering and decadent way to begin your day!
Life has been a whirlwind lately. While it has been crazy busy between work and my personal life, I have been very fortunate lately. I had a wonderful trip to Calgary where I was able to stay with an old friend, Bec, explore the city and spend some time in the mountains. I have also been lucky enough to be invited to a number of tasting events at restaurants in Winnipeg, which have been a ton of fun as well. Not to mention delicious! I’ve met some amazing local foodies, forming friendships with them and feel so happy to get to hang out with people who love food just as much as I do. We truly have an amazing local food scene here in Winnipeg that I really appreciate! Life has involved a LOT of eating lately, which is never a bad thing.
However, I probably need to eat healthier. Unfortunately, this sandwich isn’t the answer to that.
It’s kind of the opposite, actually. I mean, I took a croissant which is already loaded with butter… and I added more butter to it. Because I am a crazy person.
And then… I added bacon. And cheese.
I truly am a crazy person.
Or maybe I am a genius? Because this sandwich is damn good. And it does have apples on it too… which are supposed to be good for you. So this breakfast sandwich is at least 1% healthy, right? I’ll take it.
Honestly, I’d eat this breakfast sandwich every weekend. It’s just got all the right flavours to it, goes wonderfully with a piping hot cup of coffee and I mean… it involves bacon and cheese. You can never go wrong with that.
I definitely recommend using a nice sharp cheddar for this sandwich. The sharp cheese contrasts nicely against the apple, adding that little extra to this breakfast sandwich that makes it shine over others. I used Bothwell Cheese extra old while cheddar which was perfect for this. Bothwell Cheese is locally made here in Manitoba (their products are available throughout Canada), and those of you that know me know I love supporting local food companies! I don’t think I have ever had a single cheese from them that I haven’t loved, in fact their red wine cheddar is on every single cheese board I ever put together. (FYI – this is not sponsored. I am just a fan. :))
As for the apple, I recommend using a Granny Smith apple, as the tartness also goes well with the bacon and the cheese. I feel like a Honeycrisp apple may also be quite nice here.
And really – don’t forgo brushing the thyme butter over top the croissants, even if you are trying to be healthier. I mean, you are already indulging by having a croissant breakfast sandwich that’s got cheese and bacon, so you may as well take the extra step of doing this to make this super decadent.
Weekends are for indulging after all.

Apple Cheddar Bacon Breakfast Sandwiches
Ingredients
- 2 tbsp butter , melted
- 1 tsp fresh thyme leaves
- 1 1/2 cups shredded sharp cheddar cheese
- 1/2 Granny Smith apple , sliced thin (Honeycrisp or other slightly tart apple also works)
- 8 slices bacon , cooked crispy
- 4 large croissants
Instructions
- Preheat the oven to 350Β°F.
- In a small bowl, stir the thyme leaves into the melted butter and set aside.
- Slice croissants in half lengthwise and arrange bottom halves on a metal baking pan. Layer on shredded cheese, apple slices and bacon. Cover with croissant tops and brush generously with thyme butter.
- Bake for 7-10 minutes, until tops of croissants are slightly crisp, cheese is melted and sandwich is warm. Serve immediately.
Apple, cheese, & bacon can’t be beat, and on a croissant, OMG. So good!

Just had apple cheese and egg on a croissant in Old Forge NY and Iβm making it this morning, sooo good, will grill the apple and croissant slightly!
