Happy New Year! Hello 2018, it’s nice to make your acquaintance. I am excited for what this year has to offer – it will be my first full year of blogging (I started this blog last April!) and hopefully a year of many other exciting things.

How was your New Years Eve? What did you do to celebrate? I’m curious, so be sure to let me know in the comments below! We started the evening out by going to the casino with some friends. I’m not really much of a gambler myself, but happily both Joel and I made a bit of money so that was a good start to the evening! Then we went to our friends for a potluck style dinner. I’m sure you’re wondering what I contributed, and I’m pleased to tell you that after today’s post, it will be the next recipe featured on the blog. Did you make any resolutions, or are you the kind of person who hates the idea of them? I’m also curious to know about this, I love learning more about my readers. Personally, I haven’t made any “official” resolutions, but I plan to work even harder at creating new recipes and posting here regularly and growing the community around Zest & Simmer. I also hope to do some more traveling, hopefully to at least one brand new place!

I also have one other thing I want to try to do and it is a typical one you hear around this time – I want to eat healthier. Not that we eat totally unhealthy all the time or anything, but I am a sucker for carbs and cheese. Especially cheese.

So yeah! More veggies, more fruit, more better-for-you food all around.

Let’s start with this smoothie bowl, shall we?

I’ve always loved smoothies, yet somehow I only have one other smoothie recipe here so far – my raspberry pineapple mint smoothie! Smoothies are so refreshing and if made right can be very filling too. I love how customizable they are and how there are just so many variations and options. Want to throw some protein powder in? Go for it. Chia seeds, flax seeds? Those work too. Or maybe you want to add some spirulina!

This smoothie bowl recipe couldn’t be easier. Not a ton of ingredients, but it is nice and thick which is why I found it worked best as a bowl. Plus it’s fun to add a a variety of toppings in, and something about smoothie bowls are just oh-so-instagrammable. (Fine, call me basic, but I don’t care). If you would prefer to sip this from a glass I would just suggest to add in a splash more of the almond milk!

Feel free to add whatever sort of toppings you prefer. I went with frozen blueberries and coconut chips to keep it simple. If I had actually had some fresh fruit like kiwis or strawberries in my fridge I probably would have added those too. Other popular smoothie bowl toppings include other fruit or berries, nuts, granola, coconut, cacoa nibs… literally, the possibilities are endless. Experiment and see what you can come up with! And share a picture with me because I would love that.

This smoothie bowl has slightly tropical flavours, making me forget that it has been -40°C outside with the windchill lately. It makes me feel damn good. It’s healthy, and most of all its delicious. I hope you enjoy!

Ingredients

  • 2 cups frozen pineapple chunks
  • 1 cup frozen peach slices
  • 1 banana , sliced
  • 1 tsp vanilla extract
  • 1 tbsp honey
  • 1 1/3 cup almond milk (or other milk/milk alternative)
  • toppings - can include sliced fruit, berries, nuts, granola, coconut (optional)

Instructions

  • Add all ingredients except toppings to a large high powered blender and puree until complete smooth. If needed, or if you would like a thinner smoothie, add a touch more almond milk than the recipe calls for.
  • Pour smoothie into individual bowls and add toppings. Enjoy immediately!

  1. I’m actually eating a smoothie bowl right now. It was supposed to be a smoothie, but I ran out of milk. Haha. Good thing for spoons, right? Loving the tropical flavors of your bowl. Maybe if we eat enough pineapple, we’ll magically transport to Guatemala under the hot sun. It’s worth a try 🙂 Happy weekend!
