White Chocolate Chip Pancakes with Balsamic Roasted Strawberries – Fluffy pancakes stuffed with white chocolate chips and topped with decadent balsamic roasted strawberries. These make for a luxurious breakfast to start off the weekend!
What is a weekend morning without some pancakes?
Seriously, can you even call it a weekend if you don’t have pancakes? They are such a great staple and with like a bazillion ways to make them you can have a different version every weekend for the rest of your life. Sweet, savory, or just classic pancakes….you can’t go wrong.
These pancakes came about because I walked into the grocery store last Friday evening and was immediately hit by the scent of strawberries. Overwhelmed by it. There in front of me were these gorgeous strawberries ON SALE. Like what!? It’s not even strawberry season here yet in Manitoba! But hey, I’ll go with it.
So come the next morning I decided I had to make something with them. Pancakes were obviously the answer.
During the week I have approximately 10 minutes for breakfast so they tend to be quick things like overnight oats, smoothies, or a bowl of cereal. On weekends I like to wake up slowly, enjoy a nice hot cup of coffee and make something special for breakfast. Like these white chocolate chip pancakes.
Have you ever had a roasted strawberry? Honestly I did not think there was a way I could like strawberries any more than I do but I think this is it. Roasting them brings them to a whole new level.
Even better is that you can use these roasted strawberries a TON of different ways. Don’t feel like pancakes? Maybe waffles are more your thing. Or how about stirring them into some Greek yogurt? They’d also be good on a crostini with goat cheese if you’re feeling a fancy appetizer. Obviously they would also be great with ice cream. Ice Cream for breakfast!?!? Yes. Lets do that. You’re an adult and that means you can have ice cream for breakfast if you want to!
Okay, back to the pancakes.
The tangy balsamic vinegar pairs so nicely with the sweet strawberries and white chocolate chips.It is so indulgent yet easy to make. Not to mention these are perfectly fluffy too! This might just be the perfect breakfast!
Go on. Make these this weekend. Whoever you make them for is sure to love you forever.

White Chocolate Chip Pancakes with Balsamic Roasted Strawberries
Ingredients
For the Balsamic Roasted Strawberries
- 2 cups strawberries halved
- 2 tbsp granulated sugar
- 3 tbsp balsamic vinegar
- 1 tsp vanilla
For the Pancakes
- 2 cups flour
- 3 tbsp granulated sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1 1/2 cup buttermilk* (see notes)
- 2 large eggs
- 1/4 cup butter melted
- 1/2 cup white chocolate chips
Instructions
For the Balsamic Roasted Strawberries
- Preheat oven to 400°F.
- In a small to medium sized oven-proof casserole dish stir together all ingredients for Balsamic Roasted Strawberries.
- Roast in oven uncovered for 25 minutes, stirring halfway through.
- Remove from oven and let cool for 5 minutes before using.
For the Pancakes
- While balsamic roasted strawberries are cooking start on the pancakes. In a large mixing bowl, stir together the flour, sugar, baking powder, baking soda and salt.
- In a smaller bowl mix together the buttermilk, eggs and melted butter.
- Stir wet ingredients into dry ingredient mixture, whisking until smooth.
- Heat a griddle or skillet over medium heat. Add a bit of butter or cooking spray to the griddle and then spoon batter into pan. Cook until bubbles form on top, flip and then cook for 1-2 minutes more.
- Top pancakes with balsamic roasted strawberries, and syrup as well if desired.
