Ingredients
1cupbutter,softened
1cuppacked brown sugar
1/2cupgranulated sugar
1egg
1tspvanilla extract
2 1/2cupsflour
1/2tspbaking powder
1/2tspbaking soda
1 1/4tspcinnamon
1/2tspground ginger
1/4tspnutmeg
1/8tspground cloves
1/2tspsalt
1package (270g)butterscotch chips
Instructions
Preheat oven to 350°F and line baking sheets with parchment paper or silicone baking mat.
Beat together the butter and sugars in a large mixing bowl until soft and fluffy. This is best done with an electric mixer. Beat in the egg and vanilla until fully combined.
Add the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, cloves and salt and mix well. Stir in the butterscotch chips.
Roll the dough into 1-inch balls. Roll balls in the icing sugar to coat them well. Place dough balls 2 inches apart on the prepared baking sheets.
Bake cookies for 10-13 minutes. They should begin to crack and the edges will be golden brown. Cool for a few minutes on the cookie sheets, then move to wire racks to cool completely. Enjoy!
