Spiced Butterscotch Cookies

Super easy butterscotch cookies with a hint of spice! These delightful cookies are perfect for the holidays with their hint of cinnamon, ginger, nutmeg and cloves.

Ingredients

  • 1 cup butter ,softened
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 2 1/2 cups flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 1/4 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp nutmeg
  • 1/8 tsp ground cloves
  • 1/2 tsp salt
  • 1 package (270g) butterscotch chips

Instructions

  • Preheat oven to 350°F and line baking sheets with parchment paper or silicone baking mat.
  • Beat together the butter and sugars in a large mixing bowl until soft and fluffy. This is best done with an electric mixer. Beat in the egg and vanilla until fully combined.
  • Add the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, cloves and salt and mix well. Stir in the butterscotch chips.
  • Roll the dough into 1-inch balls. Roll balls in the icing sugar to coat them well. Place dough balls 2 inches apart on the prepared baking sheets.
  • Bake cookies for 10-13 minutes. They should begin to crack and the edges will be golden brown. Cool for a few minutes on the cookie sheets, then move to wire racks to cool completely. Enjoy!
