Here we are nearing the end of another year, and as usual I have a holiday recipe to share with you. You may have noticed I’ve been slacking on posting here the last few years you; however, I do always seem to have motivation to share delicious goodies with you around this time. This year is no different!
December is probably my most favourite month to spend time in the kitchen. By this point in the year there is snow on the ground and the weather is usually pretty darn cold. I don’t want to leave the house and would much rather stay indoors, comfy, cozy and spending my time cooking or baking. Comfort foods are a must have, as are all the delicious baked goods that come along with the holidays. Whether it be making goodies for myself, for loved ones, or for a holiday party, it all brings me joy.
These spiced butterscotch cookies are a new one for me this year, but I can already tell they’re going to become a Christmas classic for me. Loaded with butterscotch chips, these cookies have a hint of spice from ginger, cinnamon, nutmeg and cloves. Together these spices add warmth and depth of flavour. There’s just enough of these spices to add some intrigue without being overpowering. You could leave the spices if you really wanted to, and still enjoy these cookies. But trust me, you won’t want to leave them out because it makes these cookes a little extra special!
I really love how these spiced butterscotch cookies are super easy to make and take under 30 minutes to make! There is no chilling of dough required, no cookie cutters or fancy equipment, and just your standard baking ingredients. Perfect for the holiday season when we are all so busy!
Ingredients for Spiced Butterscotch Cookies
To make these cookies you will need:
- Butter
- Brown sugar
- Granulated sugar
- An egg
- Vanilla extract
- All purpose flour
- Baking soda
- Baking powder
- Cinnamon
- Ginger
- Nutmeg
- Ground cloves
- Butterscotch chips
- Icing sugar/powdered sugar

How to make Spiced Butterscotch Cookies
These cookies are very easy to make and will be ready in just under 30 minutes! Start out by preheating your oven to 350°F and line your baking sheets with parchment paper or a silicone baking mat.
Beat together the butter and sugars in a large bowl with an electric mixer until it is light and fluffy. Next, beat in the egg and vanilla extract.
Add in the flour, baking soda, baking powder, plus all the spices and salt. Once mixed together, stir in the butterscotch chips.
You’ll roll the dough into 1-inch balls and roll them in the icing sugar to coat them well. Place dough balls on the baking sheet 2 inches apart.
Bake cookies for 10-13 minutes. They should begin to crack a bit like you see in the photos and the edges should be golden brown. Allow the cookies to cool and then you get to enjoy!
Spiced butterscotch cookies are a great recipe to include in your cookie tray this year! They are good for enjoying with a glass of milk, great for holiday gatherings or cookie swaps, and Santa is sure to love them too. 😉

Ingredients
- 1 cup butter ,softened
- 1 cup packed brown sugar
- 1/2 cup granulated sugar
- 1 egg
- 1 tsp vanilla extract
- 2 1/2 cups flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 1/4 tsp cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp nutmeg
- 1/8 tsp ground cloves
- 1/2 tsp salt
- 1 package (270g) butterscotch chips
Instructions
- Preheat oven to 350°F and line baking sheets with parchment paper or silicone baking mat.
- Beat together the butter and sugars in a large mixing bowl until soft and fluffy. This is best done with an electric mixer. Beat in the egg and vanilla until fully combined.
- Add the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, cloves and salt and mix well. Stir in the butterscotch chips.
- Roll the dough into 1-inch balls. Roll balls in the icing sugar to coat them well. Place dough balls 2 inches apart on the prepared baking sheets.
- Bake cookies for 10-13 minutes. They should begin to crack and the edges will be golden brown. Cool for a few minutes on the cookie sheets, then move to wire racks to cool completely. Enjoy!
