Ingredients
2 1/4cupsall purpose flour
1 1/2tspbaking soda
1/2tspsalt
1cupunsalted butter, softened to room temperature
1 1/2cupsgranulated sugar
1largeegg
2tsprum or rum extract
2limes, zested
1 1/2tbspchopped fresh mint
2tbspextra sugar for rolling
Instructions
In a medium bowl whisk together the flour, baking soda and salt.
In a large mixing bowl, beat together the butter and sugar until creamy. Beat in the egg, rum/rum extract, lime zest and chopped mint until fully combined.
Gradually add the flour mixture to the wet ingredients (I find in 1/3s works best), mixing until just combined. Cover bowl with plastic wrap and let sit in the fridge for 30 minutes.
Preheat oven to 350°F and prepare cookie sheets with parchment paper. Put the extra sugar for rolling in a shallow bowl and set aside.
Remove cookie dough from fridge. Roll into approximately 1 tbsp sized balls, and then roll in sugar to coat. Flatten balls gently with the bottom of a glass.
Bake cookies for 11-12 minutes, until edges are just turning golden. Allow to cool on cookie sheets for 5 minutes, then transfer to wire rack to cool completely. Enjoy!
