Blueberry Brie Bacon Burger

A delicious gourmet burger you will fall in love with! A homemade burger patty is stuffed and topped with creamy brie cheese, which nicely compliments the sweet and tangy blueberry barbecue sauce. The burger is finished off with crispy bacon for a nice crunch plus sauteed onions and arugula. It doesn't get tastier than this!

Ingredients

For the Blueberry Barbecue Sauce:

  • 1 1/2 cups blueberries (fresh or frozen)
  • 1/2 small onion , finely chopped
  • 1/2 jalapeno , seeded and minced
  • 1 clove garlic , minced
  • 4 tbsp packed brown sugar
  • 3 tbsp ketchup
  • 3 tbsp balsamic vinegar

For the Burgers:

  • 1 lb lean ground beef
  • 3 tbsp breadcrumbs
  • 2 cloves garlic , minced
  • 1 tbsp worcestershire sauce
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 8 oz brie cheese , rind removed and cut into chunks
  • 4 slices bacon , cut in half and cooked until crispy
  • 1 tbsp olive oil
  • 1/4 red onion , cut into slices or rounds
  • 3/4 cup arugula
  • 4 tbsp mayonaisse
  • 4 good quality burger buns (I used brioche)

Instructions

For the Blueberry Barbecue Sauce:

  • Add all ingredients for the barbecue sauce into a medium saucepan. Bring to a boil, then reduce heat to low. Allow to simmer, stirring occasionally, until thickened, approximately 15 minutes. Remove from heat and allow to cool. Extra barbecue sauce can be stored in an airtight jar in the fridge for 5 days.

For the Burgers:

  • In a large bowl, add the ground beef, breadcrumbs, garlic, worcestershire sauce, salt and black pepper. Using your hands combine the ingredients together, careful not to over mix.
  • Divide beef mixture into 4 and form into 4 rough patties. (No worry about making them perfect just yet as we will be reshaping them!)
  • Divide half of the brie among the patties and fold beef around the cheese. I like to roll it into a sort of ball shape and then flatten back into a patty shape, with the cheese in the center.
  • On a grill or in a large pan on your stove top cook patties over medium high heat for 3-4 minutes. Flip, and cook for another 3 minutes. Add the remaining brie on top of the burgers, cover and cook for another 1-2 minutes until burgers are cooked through and cheese is melted. Remove from heat and set aside.
  • Heat oil in a small skillet. Saute the red onion for 5 or so minutes, until softened and remove from heat.
  • Time to assemble the burgers! Spread the mayonnaise evenly among the buns. Add the burger patties, then top with the blueberry barbecue sauce, bacon slices, onion and arugula. Top with the other half of the bun. Enjoy while still hot!
