Ingredients
1tbspolive oil
1lblean ground beef
1yellow onion, diced
4clovesgarlic, minced
1smalljalapeno, diced
128 oz candiced tomatoes
119 oz canblack beans, drained and rinsed
1 1/2tbspchili powder
2tspcumin
1tsporegano
4cupschicken broth
salt and pepper(to taste)
1340 g packagemacaroni
2cupsshredded cheddar cheese
Instructions
In a large pot, heat olive oil on medium-high heat. Add in ground beef, onion, garlic and jalapeno. Cook until the ground beef is fully browned, crumbling beef as it cooks, about 5 minutes.
Stir in chicken broth, tomatoes, beans, chili powder, cumin, and oregano. Add salt and pepper to taste.
Stir in macaroni. Bring to a boil, then reduce heat and simmer until pasta is cooked al dente (about 10 minutes though can vary depending on the brand of pasta you use). Most of the liquid should be absorbed at this point.
Stir in half of the shredded cheese, then top with the remaining cheese and cover pot until melted. Remove from heat and serve.
