Ingredients

  • 4 large eggs
  • 1 cup eggnog
  • 1 tbsp melted butter
  • 1 tsp vanilla extract
  • 1 tsp rum extract
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon
  • 10-12 slices bread

Instructions

  • In a large shallow-bottomed bowl, whisk together the eggs. Then, whisk in the eggnog, melted butter, vanilla extract, rum extract, nutmeg and cinnamon. (It's okay if the butter clumps up a little bit).
  • Heat an electric griddle to 350°, or heat a large frying pan to medium heat. Drizzle with oil or spray with non-stick cooking spray.
  • Submerge a piece of bread in the batter, then flip and submerge the other side. Shake off any excess batter and place on the heated griddle or frying pan. Cook on one side until golden, about 2-3 minutes. Flip to the other side and continue to cook until that side is golden as well, another 2-3 minutes. Repeat this process with all of the bread slices.
  • Serve the eggnong french toast warm with maple syrup, whipped cream, and a sprinkle of nutmeg.
