Ingredients
1/2cupshredded carrot
1cupquick oats or rolled oats
1tbspchia seeds
2tbspraisins
1tbspchopped walnuts
1tspcinnamon
1/4tspallspice
1 1/4cupmilk or milk alternative
3tbspmaple syrup
1tspvanilla extract
additional walnuts or raisins for topping(optional)
Instructions
Mix together shredded carrots, oats, chia seeds, raisins, walnuts, cinnamon and allspice in a bowl.
Add in milk, maple syrup and vanilla extract and stir together.
Cover and place in the refrigerator overnight. Add additional walnuts or raisins for topping if desired. Can be served hot or cold. (Microwave for 1-1.5 minutes to serve hot.)
