Ingredients
For the Crust:
1 1/2cupsgraham cracker crumbs
1/2cupbutter, melted
1/4cupgranulated sugar
For the Cheesecake Filling:
16ozcream cheese(two packages), softened to room temperature
1/2cupgranulated sugar
1/3cupBaileys Irish Cream liqueur
2cupsCool Whip(or othe brand whipped topping)
1 1/4tsppeppermint extract
25-30dropsgreen food colouring, or until desired shade of green
Instructions
For the Crust:
Combine graham crackers and sugar in a medium sized bowl. Stir in melted butter until well combined. Press into the bottom and about 1 inch up the sides of a round 9 inch springform baking pan. Place in freezer until filling is ready.
For the Cheesecake Filling:
In a large mixing bowl beat together the cream cheese, sugar and Baileys with an electric mixer until smooth. Add in whipped topping, peppermint extract and green food colouring and mix until well combined.
Spread cheesecake filling over graham cracker crust, Cover with plastic wrap and freeze for at least 4 hours. Remove from freezer approximately 20 minutes prior to serving.
