Carrot Cake Overnight Oats
These oats are delicious and super easy to make, taste like dessert and make for an excellent grab and go breakfast for those busy weekday mornings!

- 1/2 cup shredded carrot
- 1 cup quick oats or rolled oats
- 1 tbsp chia seeds
- 2 tbsp raisins
- 1 tbsp chopped walnuts
- 1 tsp cinnamon
- 1/4 tsp allspice
- 1 1/4 cup milk or milk alternative
- 3 tbsp maple syrup
- 1 tsp vanilla extract
- additional walnuts or raisins for topping (optional)
Mix together shredded carrots, oats, chia seeds, raisins, walnuts, cinnamon and allspice in a bowl.
Add in milk, maple syrup and vanilla extract and stir together.
Cover and place in the refrigerator overnight. Add additional walnuts or raisins for topping if desired. Can be served hot or cold. (Microwave for 1-1.5 minutes to serve hot.)
