Hello friends! I know it has been quite some time (7 months) since the last time I posted a new recipe. I am so sorry it has been so long. It being 2020, I’m sure you are all pretty aware of the craziness that this year has been, what with the pandemic, protests, murder hornets (?!) and more. There were also a few things in my personal life that occurred, and to be honest with you all, I just was not in the mood to make up a blog post.

Before the pandemic even really hit North America, I had a big loss in my life. In February, we found out our beloved cat Mischief, who was 15 years old, had cancer and it was not treatable. It was a shocking thing to find out, as she had seemed so healthy and happy just days prior, and it felt so sudden. We had a couple weeks left with her before we had to say goodbye. It was one of the hardest things I have had to do in my life, and I miss her terribly. She was more than just a cat – she was family, she was a best friend. I am going to miss her forever.

Then come March, the pandemic hit the world hard, and I had to cancel my dream trip to Europe. After all that, I had a really hard time feeling any motivation to sit down and work on the blog. I have still been cooking and playing around in the kitchen. In a way it has been nice to not feel any “pressure” to make the plating as beautiful as possible, to record ingredients and technique, to take photos, and everything else that comes along with food blogging. With all the emotions and stress I was feeling, it was nice to have a bit of a break.

However, now that it has been many months, I have realized I miss sharing my creations with the world. I get a sense of pride when I make something new, and when other try my recipe and tell me that they loved it. It was time to come back!

So here we are, finally, with a new recipe that I am excited to share with you all – Pumpkin Spice Dalgona Coffee.

A pumpkin spice treat!

Every September, the pumpkin craze starts. It all begins with one of the most famous pumpkin treats, the pumpkin spice latte. This pumpkin spice dalgona coffee is a twist on that, combining two trendy drinks into one!

What is dalgona coffee?

Wondering what dalgona coffee is? It’s a whipped, frothy coffee drink that became super popular on the internet this year. With just a few simple ingredients – instant coffee, boiling water, sugar and milk – anyone can easily put together this fancy looking beverage in their own home. It is created by whisking the instant coffee, boiling water and sugar together for a few minutes (use a hand or stand mixer to save your arm!). This creates a frothy, silky, creamy coffee that you then spoon over the milk of your choice.

How to make pumpkin spice dalgona coffee

Making this coffee is quite simple, it just takes a few ingredients and a few minutes of your time.

I recommend using a stand mixer or hand mixer to whisk the ingredients together. You can whip it by hand if you don’t have a mixer, but it will take a bit longer and your arm will likely be pretty sore!

In a mixing bowl, add in the instant coffee, boiling water and sugar. With your mixer, whisk all the ingredients together on high for about 3-4 minutes until the mixture is thick and forms stiff peaks. It should get lighter in colour as you whisk.

Add as much ice as you want into your drinking glasses. I find 5 ice cubes to be my preference, but do what suits you! Fill the glasses with milk or a milk alternative (I love it with almond milk), leaving about an inch of space at the top of the glass. If you would prefer a hot version, skip the ice and use warmed milk here. Then all you have to do is scoop on the whipped coffee mixture and serve.

When serving, I leave this unmixed as it is so photogenic. But to drink it, give things a stir to mix in the whipped coffee with the milk.

What kind of milk is used in dalgona coffee?

You can use whatever kind you love best! Keep it classic with regular milk, or make it vegan with almond, soy, coconut or oat milk. It’s all about what you desire and can easily be customized!

Pumpkin Spice Dalgona Coffee

  • Hand mixer, stand mixer, or whisk


  • 4 tbsp instant coffee
  • 4 tbsp sugar
  • 4 tbsp boiling water
  • 1/2 tsp pumpkin pie spice
  • ice (optional, as little or much as you like)
  • 2 1/2 cups milk or milk alternative


  • Add instant coffee, sugar, boiler water ad pumpkin pie spice together in a medium to large mixing bowl. With a hand mixer or stand mixer, whisk together on high until it is thick and can form stiff peaks. This should take about 3-4 minutes. You can mix by hand with a whisk if you prefer.
  • If serving iced, add as many ice cubes as you prefer to two glasses. Pour milk or milk alternative over ice, leaving about 1 inch of space at the top of the glass.
  • Scoop the whipped coffee mixture over top.
  • Serve, and mix with a spoon just before drinking.
