Mini Egg Brownie Bites – Loaded with Mini Eggs, everyones favourite Easter candy, these chocolatey brownie bites are super cute and are a perfect yummy springtime or Easter treat! Brownie edge lovers will especially adore these! This recipe is simple to whip up and will be a dessert everyone demands more of!
Who else loves baking except when its an overly complicated recipe? It’s honestly one of those things I think I love the outcome – mainly because when I bake it tends to be sweet treats – but not always the process. Baking tends to take a lot more out of me than cooking, mostly because it is so important to follow every step very carefully and you generally can’t just easily wing it with the ingredients. Cooking on the other hand is a more relaxing process for me – I can listen to music or podcast, dance, sip on a glass of wine and taste and adjust as I go.
I really do love the outcome of baking though. Especially when it is a sweet treat, and especially when it involves chocolate.
I wanted to make a fun recipe for Easter this year involving a favourite Easter candy – Mini Eggs. If you have been a reader since I first launched this blog you may remember my Mini Egg Skillet Cookie from last year. It’s awesome stuff you guys, and if you love cookies (who doesn’t?) then you will absolutely love that cookie. On a side note, I feel slightly embarrassed looking at those photos now! In the last year do feel my photography has improved, though I still do have a long way to go!
So once again I have created a Mini Egg recipe for and Easter dessert. I love how easy it is to throw these little guys into different things, they are almost like slightly bigger chocolate chips with a delicious candy coating. I guess that is exactly what they are really. Their pastel colours can really liven a treat up and really make me excited for spring, which apparently is official here! (Someone please tell that to Mother Nature for Winnipeg… it still isn’t that warm here and we still have plenty of snow on the ground!)
Now, going back to how I was saying I don’t like overly complicated recipes when it comes to baking, I kept that in mind as I developed this recipe. I wasn’t in the mood to make one of those brownie recipes where you had to melt chocolate to mix into the batter. I wanted something pretty straightforward and simple, similar to what you would do with a box mix of brownies. This is like a box mix brownie but completely from scratch – no complicated steps, simple ingredients, and a lot of goodness.
If you like brownie edges then you are going to love this recipe because here they are ALL edge pieces. They are similar to those two bite brownies you can buy at the supermarket, though slightly larger and if I do say so myself, more delicious. There is no special baking pan you need, a simple muffin tray will do the trick and is exactly what I used myself. Also how cute are brownie bites? Not to mention the perfect portion size!!!
Now I like to slightly under cook my brownies as I want them to have that soft fudgy center. If you feel the same then follow the cooking times here. It is because of the softer center that these fall slightly in the middle after you remove them from the oven. If you like a firmer, crispier brownie then you will want to add a few minutes to the cooking time in the recipe below.
I love that this is a simple and seasonal recipe! The crushed Mini Eggs add a bit of texture from the candy shell and extra chocolatiness (is that a word?) to the brownie. I like to press in a few more whole Mini Eggs to the top when there is only a few minutes left of bake time which makes these little brownie bites even cuter!

Mini Egg Brownie Bites
Ingredients
- 2 cups granulated sugar
- 2/3 cup unsweetened cocoa powder
- 1 cup all purpose flour
- 1/2 tsp salt
- 1/2 tsp baking powder
- 1 cup unsalted butter melted and cooled slightly
- 4 large eggs
- 2 tsp vanilla extract
- 1 1/2 cups Mini Eggs divided
Instructions
- Preheat oven to 350°F. Spray two muffin trays generously with baking spray to prevent brownies from sticking.
- In a large bowl sift together sugar, cocoa, flour, salt and baking soda.
- Using a mixing spoon or hand mixer, mix the melted butter, eggs and vanilla into the dry ingredients.
- Crush 1 cup of the Mini Eggs and stir into batter. I crush mine by putting them in a Ziplock bag and then going over them with a rolling pin. You want them to be in smaller pieces, but not completely obliterated.
- Divide batter evenly into muffin trays, put in oven and bake for 10-12 minutes. Remove from oven and press remaining Mini Eggs gently into the tops of brownie bites and bake for 3 more minutes.
- Allow brownies to cool slightly. Run a knife around the edges and then gently transfer to a wire rack to cool completely. Enjoy!

I love baking too, Vanessa! But I often give it away (bring it to work, neighbors etc) or it’s dangerous sitting around my house 🙂 I love that these guys are small, but I especially love the gooey centre – yum!

I feel the same way when it comes to baking. It always seems like a lot more effort, where cooking is a relaxing process to me. These brownies look so yummy. I love that there’s not a ton of ingredients, too

I don’t think anyone has noticed that it says 1/2 tsp baking powder in the ingredients, but in the recipe it says 1/2 tsp baking soda…..So I was wondering do you use bs or bp

Hi Alicia thanks for the feedback. I just used two regular/standard sized muffin tins and filled them so that the batter was divided evenly among all of them. The brownies end up being slightly larger than those “bite sized” ones you can find in many grocery stores.
