Magical Chocolate Chip Cookie S’mores Bars – these cookie bars contain tons of marshmallows that pull a magical disappearing act when you bake them, but are still full of the classic s’mores flavour. A perfect treat for your summer or fall celebrations!
Can we just go ahead and call s’mores the best summer treat? I know, I know there are so many other delicious summery treats to enjoy. Ice cream, peach pie and popsicles just to name a few, but to me s’mores just scream summer. Just thinking the word brings me back to camping trips with my family as a kid and roasting marshmallows over a campfire.
I’ve always been that person who enjoys my marshmallows perfectly golden. It takes patience, but the end result of that golden roasted marshmallow is absolutely worth it. Some people just like to scorch theirs, and eat it burnt which personally I just don’t get. But hey, whatever floats your boat! How do you like your marshmallows?
There is one story about burnt marshmallows that sticks out to me from when I was a kid… I was camping with my family in Bridal Falls, B.C. and I met another little girl and we became friends. I went back with her to her family’s campground and her mom gave us marshmallows to roast, and for some reason this other little girl asked me to do hers for her. She told me she liked hers burnt, so naturally I then stuck hers right into the flames. I let it catch on fire and then pulled it out and let it burn for a few moments…
Well, her mother happened to catch sight of what I was doing and immediately began screaming at me for burning the marshmallow! All I could say was, “but that’s how she wanted it!” and then quickly book it out of there back to my own family’s campsite. I’m not sure why this memory really has stuck in my brain, but I sure can look back and laugh at it now! Who knows, maybe that little girl will someday, somehow come across this blog post and remember it too…
Anyhow, the sweet, sweet taste of s’mores is just something I love so much. I’m definitely that person who will order s’mores anything if it’s on the menu where I happen to be!
I realize we are in September now and I was sort of late to the game with this recipe… but summer is not over yet! Fall doesn’t officially start until September 22nd so let’s make the most of summer while we still can. And even then, these magical chocolate chip cookie s’mores bars make a perfectly cozy autumn treat.
These cookie bars are amazing, guys. I mean, how could you go wrong when you’ve got layers of chocolate chip cookies stuffed with loads of gooey marshmallows and sprinkled with graham cracker crumbles? It’s all good stuff.
So why do I call these bars “magic”? Well, something weird happens to the marshmallows when you bake this. Most of them actually seem to ~magically~ disappear into the cookie dough, so you don’t see them anymore but when you take a bite you sure can taste them! So yeah, magic.
I know there are ways around this magical marshmallow disappearing act, but honestly I didn’t mind them at all like this. You still get that delicious s’mores flavour! Maybe this should have been a “kitchen fail” but these just tasted too damn good to call them that. So magic they become.

Magical Chocolate Chip Cookie S'mores Bars
Ingredients
- 1 cup unsalted butter , softened
- 1 cup lightly packed brown sugar
- 1/2 cup granulated sugar
- 1 tsp vanilla
- 1/4 tsp salt
- 1 tsp baking soda
- 2 1/2 cups all-purpose flour
- 1 1/2 cups chocolate chips
- 2 cups mini marshmallows
- 6 graham crackers (3 sheets) , crumbled
Instructions
- Preheat oven to 350°F. Coat 9"x13" baking dish with cooking spray and set aside.
- In a large mixing bowl, beat together the butter and sugars until light and fluffy, about 2 minutes. Add in eggs, vanilla, salt, baking soda and mix together well. Add flour and beat until combined. Stir in chocolate chips.
- Press half of the cookie dough into the baking dish, making sure it is evenly spread. Spread marshmallows over top the cookie dough. Dot the remaining cookie dough over top the marshmallows in teaspoon sized clumps. Sprinkly the graham cracker crumbles over top (some should end up between the clumps of cookie dough).
- Bake for 20-25 minutes. Allow to cool for 10-15 minutes before cutting slices. Best served warm!
