What was your favourite cereal as a child? Perhaps it is still a favourite even today!. I honestly can’t recall what I would have considered my favourite, there were so many good ones – Cinnamon Toast Crunch, Fruit Pebbles, Lucky Charms. All such sweet, sugary goodness. With St. Patrick’s Day coming up, I thought it was the perfect opportunity to get a box of Lucky Charms and make a delicious snack with them! Move over Rice Krispies Squares, there’s a new contender on the block: Lucky Charms Marshmallow Squares!

There are not many ingredients or steps in this recipe, which means anyone can make this. I’m sure for those of you that have kids, they would be happy to help make this magically delicious marshmallow treat! With only 5 ingredients and less than 10 minutes to whip this up, this may be one of the easiest recipes you’ve ever made. Which is good, because they will not last long and you can make another batch super quick!

If you love marshmallows then this is certainly the treat for you. I mean, fun, magical shaped marshmallows added to more marshmallow? Sounds pretty amazing to me!

A tip to making these marshmallow squares is to pick out a handful of the Lucky Charms marshmallows and set them aside. After transferring the cereal and marshmallow mixture to the pan you can top them with the reserved marshmallows to make these look all the more fun.

I really enjoy these Lucky Charms Marshmallow Squares because they have a bit of crunch, they are super marshmallowy (just made that word up), and since it’s cereal that totally means you can eat the for breakfast, right? We’ll say yes.

Really, these can be made any time of year. But I loooove celebrating holidays – any holiday really – and that includes St Patrick’s Day! Last year I made this Baileys Shamrock Shake Cheesecake, which is another great option if you are planning on celebrating this weekend. I mean, the day is known for enjoying some ~adult~ beverages, and a boozy food totally counts if you ask me.

Speaking of St Paddy’s Day, this year we will be celebrating it in New Orleans! I am so excited for it, as I hear they have some pretty cool parades and street parties to celebrate it. It will definitely be the most memorable St Patrick’s day I will ever have!

Lucky Charms Marshmallow Squares

A kid friendly gooey marshmallow treat that is quick and easy to make. They're magically delicious and perfect for St Patrick's Day celebrations!

Ingredients

  • 5 tbsp unsalted butter
  • 5 cups mini marshmallows
  • 5 cups Lucky Charms cereal (pull out some of the cereal marshmallows and reserve on the side for topping)
  • 1/2 tsp salt
  • 1/2 tsp vanilla

Instructions

  • Prepare an 8x8" baking dish with cooking spray.
  • In a large pot melt butter of medium heat. Add the mini marshmallows and stir until melted and smooth. Stir in salt and vanilla.
  • Gently stir in cereal until full coated in marshmallow. Do not spend too long on this or the cereal marshmallows will begin to melt. If it is taking you some time, remove from the heat.
  • Press mixture into the prepared baking dish. Allow to set for at least 1 hour before cutting into squares. Enjoy!
