How did you celebrate this year? We kept it pretty low-key, having a quiet dinner at my mom’s place on Sunday. I love the Thanksgiving dinner my mother makes, her turkey and especially her gravy are the best I’ve ever had! Some of you may be surprised I’ve never cooked a full Thanksgiving dinner myself (hers is already perfect!), in fact I’ve only roasted a turkey once ever before. One day maybe though I will host… Instead, this year I helped out by making the mashed potatoes and the whipped cream for the pumpkin pie.

Update in 2019: Last year we hosted our first Thanksgiving! My mom still made her amazing turkey and gravy, but I made all the sides and the dessert!

This sandwich is my favourite way to use up leftover turkey and cranberry sauce, and I look forward to making it every year! It still has the classic flavour of a Thanksgiving meal but includes lots of gooey brie cheese. Can you ever go wrong with brie cheese? (The answer is no.)

You know what else I love about this sandwich? How quickly it comes together. I still feel like I am in a turkey coma, so anything that’s practically effortless for today’s meals is perfect for me.

What goes in this grilled cheese sandwich?

As mentioned above, this sandwich comes together really quickly as it only involves a few ingredients. It has leftover turkey and cranberry sauce, with brie all between two pieces of a nice sturdy bread like italian or sourdough.

How do I make this turkey, cranberry & brie grilled cheese sandwich?

Making this sandwich is almost like making a regular grilled cheese!

You butter one side of the bread, and place it in a hot skillet. Then you add the cranberry sauce, the brie and then the turkey. Top it off with a little more cranberry sauce and then add the other slice of bread on top.

Press down on the sandwiches gently with your turner/spatula. Allow the bread to turn a nice golden brown, then carefully flip the sandwich. Cook for another 1-2 minutes, or until the other side is also golden brown. Remove from the skillet and serve immediately.

Turkey, Cranberry & Brie Grilled Cheese Sandwiches

Ingredients

  • 4 slices thick, sturdy bread (italian, ciabatta, sourdough, etc)
  • 5 tbsp cranberry sauce
  • 100g brie cheese , cut into slices
  • 8 oz roast turkey
  • 2 tbsp butter

Instructions

  • Spread butter on one side of each of the pieces of bread. Heat a large skillet over medium heat and put two slices of bread butter side down in the skillet. Add 2 tablespoons of the cranberry sauce to each of those slices, then evenly divide the brie cheese and turkey over top. Spread the remaining tablespoon of cranberry sauce on the last two slices of bread and place them cranberry sauce side down to top off the sandwiches.
  • Cook for a few minutes, pressing down gently on the sandwiches with the turner/spatula to gently flatten them. Allow to cook until the bread is golden brown. Carefully flip the sandwiches and cook another minute or two until that side is also golden brown. (Alternatively, if you have a panini press you could also cook the sandwiches on this.) Remove from skillet and serve immediately.

Notes

The amount of turkey, cranberry sauce, and brie may vary depending on how big the slices of your bread are. Feel free to add more or less depending on the size, to cover the whole thing.
