I really want to apologize that I haven’t had more posts lately. My intent when I started this blog was to do at minimum one post a week, but to try for two. I’ve at least pretty much done one a week so I haven’t completely dropped the ball at least! Life has be so, so busy lately. I mean we’re already past the midway point of July. Why does summer always have to fly by? I really wish it lasted longer!
I am headed to Montreal later this week and am super excited as I have never been there before and I’ll be spending time with my brother who is there for work for a few weeks. I haven’t seen him in two years which just seems crazy, so it’ll be really nice! I’m also looking forward to exploring the city, checking out one of the awesome farmers markets I’ve heard about, and hitting up some amazing restaurants and cafes. Scrolling through endless yummy Instagram posts has given me ideas of where to go, and so far I have three different ice cream places on my list. Yeah, I might be a little bit obsessed with ice cream…
Anyways, if you’ve been before or possibly if you live there, give me suggestions of what I should do and see, I’d love to hear it! Now, on to the food…
It’s amusing to me how something so simple, so basic as toast is a “thing” right now. Not that any of the toasts I am seeing on my Instagram feed can be called “basic” as they’re topped with all sorts of interesting and tasty foods. To be honest, I am loving it because I always love seeing and trying variations of classic food items, I enjoy toast (who doesn’t?), and its fun how the possibilities are basically endless.
I’ve come up with a version of my own that is perfect for breakfast, a snack, or even an appetizer if you wanted. The strawberry obsession continues, as you can see here, and I’ve paired it with one of my other favourites – goat cheese. To top it all off we’ve got some basil and a balsamic drizzle to bring it all together.
This recipe is so simple you almost can’t even call it a recipe. I mean, its only five ingredients and as long as you’ve got a toaster and a knife you’re good to go. Don’t you just love it when you can eat something that seems fancy but only took a couple of minutes to whip up? Feels good, doesn’t it?
I love the tang of the goat cheese in contrast with the sweetness of the strawberries. When I first made these I intended to only have two slices of toast but after inhaling those I quickly made two more which were promptly devoured as well. I think I may go make another two toasts after I finish this post up…

- 2 slices bread (I used multigrain)
- 3-4 tbsp goat cheese , softened
- 3 strawberries , sliced
- 4 basil leaves , choppped
- 2 tsp balsamic vinegar
Toast the bread until golden. Spread goat cheese over while still warm, top with sliced strawberries and the basil. Drizzle 1 tsp of the balsamic vinegar over each toast. Serve and enjoy!
